Searing the Beef

Sear beef fillets on high heat for 2 minutes per side to form a golden crust. Let the meat cool before proceeding to maintain tenderness.

Preheat oven to 375 degrees F (190 degrees C).

In large bowl, cream together butter, white sugar, and brown sugar until smooth. Beat in the eggs and vanilla until fluffy. Stir together flour, baking soda, and salt. Gradually beat into butter mixture. Stir in oats and raisins. Produces 2 dozen cookies using a #24 1 1/3 oz scoop.

Bake 8 to 10 minutes in the preheated oven, or until golden brown. Cool slightly, remove from sheet to wire rack. Cool completely.

3 sticks butter

1 ½ cups white sugar

1 ½ cups light brown sugar (packed)

4 eggs

2 teaspoons vanilla extract

3 cups all-purpose flour

2 teaspoons baking soda

1 teaspoon kosher salt

5 ½ cups old fashioned rolled oats

2 cups chocolate chips
