Searing the Beef
Sear beef fillets on high heat for 2 minutes per side to form a golden crust. Let the meat cool before proceeding to maintain tenderness.

In a fry pan, cook bacon and onion until caramelized; drain, reserving drippings. Add bacon, onion, basil, tomatoes, eggs, bread crumbs, salt and pepper to beef; mix wel. Form in two loaf pans, pour reserved drippings over the top of each loaf.
Bake at 350°F., 45 minutes or until done. Slice loaves, serve with Country Mashed Potatoes and Mushroom Sauce.

In a large saucepan, cook onions and garlic in butter 10 minutes or until soft. Add mushrooms, 1-1/2 cups red wine, Worcestershire sauce and thyme; reduce by half by simmering 15 minutes. Ad water, parsley and beef base; bring to aboil, simmer 15 minutes. Combine cornstarch and 1/4 cup red wine; stir into sauce. Heat, stirring until thick.

1 medium white onion chopped
4 oz fresh basil chopped
3 Roma tomatoes chopped
3 eggs
1-1/2 cups Panko bread crumbs
1/2 teaspoon salt
1/4 teaspoon pepper
2-1/2 lb ground chuck beef

1 red onion thinly sliced
1/2 white onion thinly sliced
2 garlic cloves chopped
3 tablespoons butter
8 oz. fresh mushrooms sliced
1-1/2 cups red wine
1/2 teaspoon Worcestershire sauce
1/4 teaspoon dried thyme
4 cup water
1/4 cup parsley chopped
1 tablespoon beef flavor base
1/4 cup cornstarch
1/4 cup red wine
