Searing the Beef
Sear beef fillets on high heat for 2 minutes per side to form a golden crust. Let the meat cool before proceeding to maintain tenderness.

1. Sear the Chicken (10 mins!)
Pat chicken dry, season with salt, pepper, and paprika.
Heat oil + bu=er in a skillet over medium-high heat.
Cook chicken 5-6 mins per side unCl golden. Remove and set aside.

2. Make the Boursin Sauce
In the same skillet, sauté garlic for 30 sec unCl fragrant. Pour in broth, scraping up browned bits. Simmer 2 mins. Reduce heat to low, whisk in Boursin cheese unCl melted. SCr in cream, parsley, and thyme.

3. Finish & Serve
Return chicken to the skillet, spooning sauce over top. Simmer 3-4 mins unCl chicken is cooked through (165°F/74°C). Garnish with extra herbs and cracked black pepper.

4 boneless skinless chicken breasts (or thighs)
2 tbsp olive oil
2 tbsp bu9er
3 garlic cloves
minced
1⁄2 tsp salt
1⁄2 tsp black pepper
1 tsp paprika

1⁄2 cup (120ml) chicken broth
1⁄2 cup (120ml) heavy cream
1 tbsp fresh parsley - chopped
1 tsp fresh thyme leaves
